Instructions
1
Prep
Dice the onion finely and mince the garlic clove, then set both aside near the stove.
2
Saute
Heat the vegetable oil in a small skillet over medium heat and cook the onion for 3 minutes until softened and translucent, then add the garlic and cook 30 seconds.
3
Bloom
Stir the curry powder and turmeric into the skillet; cook over medium-low heat 1 minute until fragrant and deep yellow.
4
Sear
Add the ground beef to the skillet, breaking it up with a spoon, and cook over medium-high heat 5 minutes until no pink remains and lightly browned.
5
Reduce
Stir in the soy sauce, oyster sauce, sugar and cornstarch-water slurry; simmer over medium-low heat 2 minutes until the mixture thickens into a glossy paste.
6
Cool
Transfer the beef filling to a small plate and let it cool 15 minutes uncovered at room temperature.
7
Build
Cut the puff pastry sheet into two 4-inch squares, spoon the cooled filling onto one half of each square, fold over, and press edges with a fork to seal.
8
Finish
Brush the tops of the pastries with the beaten egg using a pastry brush.
9
Bake
Place the pastries on a lined baking tray and bake in an oven preheated to 400F (200C) for 20 minutes until the pastry is puffed and golden brown.
10
Plate
Transfer the pastries to a small plate and serve warm.
