Instructions
1
Prep
Press tofu between paper towels for 10 minutes to remove excess moisture, then cut into cubes and set aside.
2
Marinate
Toss tofu cubes with 1/2 tsp soy sauce in a small bowl and let sit for 15 minutes.
3
Fry
Pan-fry tofu cubes in a nonstick skillet with sesame oil over medium-high heat for 4–5 minutes, turning occasionally, until edges are golden.
4
Whisk
In a small bowl, combine tahini, remaining soy sauce, rice vinegar, chili oil, honey, minced garlic, grated ginger and water until smooth.
5
Boil
Cook wheat noodles in salted boiling water over high heat for 4–5 minutes until tender, then drain and rinse under cold water until fully cooled.
6
Toss
Add cold noodles and edamame to a mixing bowl, add half the sauce and toss with tongs until coated.
7
Build
Pile noodles onto a plate, scatter tofu, julienned cucumber and sliced scallion over top, then drizzle with remaining sauce.
8
Plate
Sprinkle sesame seeds over the salad and serve immediately while tofu is still warm.
