Instructions

1
Prep Trim beef sirloin, then julienne cucumber and daikon radish, slice pear, and chop kimchi. Have all ingredients ready before cooking.
2
Poach Bring water, garlic, and ginger to a boil over high heat. Add beef sirloin and reduce to medium-low, simmering 18–20 minutes until fork-tender.
3
Cool Remove beef from poaching liquid and rest on a plate 10 minutes until cooled, then slice thinly against the grain.
4
Chill Mix chilled beef stock with rice vinegar and salt, refrigerate 2 hours until ice-cold for proper naengmyeon texture.
5
Boil Cook buckwheat noodles in boiling water over high heat for 3–4 minutes until translucent and floating, then drain and rinse under cold water until slick.
6
Build Coil noodles into a chilled bowl, pour ice-cold broth until half-submerged, then arrange beef, cucumber, radish, kimchi, pear, and egg on top.
7
Plate Scatter gochugaru and sesame seeds over the bowl, drizzle with sesame oil, and serve immediately while broth is icy.
