Prep
Crush the dukkah from hazelnuts, sesame, coriander, and cumin. Blend chimichurri from parsley, garlic, oregano, vinegar, and 3 tbsp of the oil. Salt both steaks.

Sear
Heat remaining 3 tbsp olive oil in a large skillet over high heat. Sear both salted steaks 3 minutes per side until deeply crusted and pink medium-rare.

Toast
Toast the dukkah in a dry pan over medium heat 2 minutes until deeply fragrant, then press it onto both steaks.

Rest
Rest the seared steaks off the heat 4 minutes until the juices settle, then slice them thinly against the grain.

Plate
Fan the steak slices out on two warm plates, spoon the chimichurri over each, and scatter extra dukkah across the top.
