Chickpea Fritter Wrap (Gluten-Free)

Spiced chickpea fritters, pan-fried until crisp, are tucked into a warmed gluten-free flatbread with cucumber, tomato, red onion and a lemony tahini-yogurt sauce. Cumin, coriander and garlic season the mashed chickpea base, while fresh parsley and sumac add brightness to this handheld Middle Eastern lunch wrap.

Instructions

1
Prep Mash the cooked chickpeas with garlic, cumin, coriander, parsley, rice flour, lemon juice, baking powder, salt and pepper until it holds together when pressed.
2
Rest Let the chickpea mixture sit in the bowl for 10 minutes so the rice flour hydrates and the mixture firms up enough to shape.
3
Build Shape the mixture into 4 small patties about 2 inches wide using your hands, then heat 1 tablespoon of olive oil in a skillet over medium heat and fry for 3 to 4 minutes per side until golden brown and firm.
4
Assemble Warm the flatbread in the dry skillet over medium-low heat for 30 seconds per side, then spread tahini-yogurt sauce (whisked together with a splash of water and remaining 1 tablespoon oil) down the center, layer on cucumber, tomato, red onion and fried chickpea fritters.
5
Plate Drizzle remaining sauce over filling, sprinkle with sumac, fold in the sides and roll tightly into a wrap, then slice in half on a diagonal and place on a plate.
