Shred the poached chicken breasts. Cut carrots into fine rounds and celery into thin slices. Chop fresh dill. Measure rice, lemon juice, olive oil, salt, and pepper.

Bring 1400ml chicken stock to a steady simmer in a large pot over medium heat, about 3 minutes. Add carrot and celery, simmer 5 minutes until just beginning to soften.

Add rice and simmer uncovered 15–18 minutes over medium heat until rice is cooked through and broth has thickened slightly.
