Cheese and Herb Flatbread
A warm flatbread topped with melted feta and mozzarella cheese, seasoned with garlic and fresh herbs. Za'atar and olive oil finish the top with a grassy, tangy bite. The cheese and crust blister in the oven, creating a crispy-edged interior. Served warm as a light meal or side.

Instructions
1
Prep
Preheat the oven to 450F with a baking sheet inside; crumble the feta and shred the mozzarella into a small bowl.
2
Build
Lay the pita on a work surface and brush with olive oil to the edges. Scatter minced garlic and salt evenly across the surface.
3
Build
Scatter crumbled feta and shredded mozzarella over the pita, leaving a thin bare rim at the edge so the crust can crisp.
4
Bake
Slide the pita onto the hot sheet and bake at 450F for 7 to 9 minutes until the cheese fully melts and edges blister and turn golden.
5
Finish
Sprinkle za'atar, parsley and scallion over the hot melted cheese to release their aroma.
6
Plate
Slice the flatbread into wedges with a sharp knife or pizza cutter and arrange on a plate.
