Soak both cedar planks in water 1 hour. Mix the brown sugar, mustard, crushed garlic, chopped dill, and pepper into a glaze.

Set each salmon side skin-side down on its own plank and spread with the glaze. Grill covered over medium heat 20–25 minutes until just opaque.
