Prep
Chop 1 onion and mince 4 garlic cloves. Measure 300g lentils, 3 cups water, 2 tbsp oil, and 2 tbsp lime juice. Halve 1 scotch bonnet pepper. Have 2 tsp thyme and 1 tsp allspice ready.

Saute
Heat 2 tbsp oil over medium heat. Add onion and garlic, cook 4–5 minutes until softened and fragrant, stirring occasionally.

Bloom
Add thyme, allspice, and scotch bonnet pepper to the pan. Cook 1 minute, stirring constantly, until spices release their aroma.

Build
Stir in 300g lentils to coat with oil and spices. Pour in 3 cups water and bring to a simmer over medium heat.

Simmer
Reduce heat to medium-low and simmer uncovered 25–30 minutes, stirring occasionally, until lentils are tender and the stew thickens slightly.

Finish and plate
Remove from heat. Stir in 2 tbsp lime juice. Taste and adjust salt and black pepper as needed. Transfer to bowls and serve warm.
