Prep Chop 1 onion into chunks. Mince 1 garlic clove. Cut 350g white fish into chunks. Have 200ml coconut milk, 1.5 tsp curry powder, 1 whole scotch bonnet pepper, 0.5 tsp thyme, salt, and pepper measured and ready.

Saute Heat 1.5 tsp oil in a small to medium pot over medium heat. Add chopped onion, cook 4 to 5 minutes until softened and translucent. Add minced garlic, cook 1 minute until fragrant.

Bloom Add 1.5 tsp curry powder to the pot, stir constantly for 1 to 2 minutes until the spice releases its aroma and deepens in color.

Simmer Pour in 200ml coconut milk and bring to a gentle simmer over medium heat. Add 0.5 tsp thyme and 1 whole scotch bonnet pepper. Stir gently.

Simmer Add fish chunks carefully to the simmering coconut broth. Cook gently for 10 to 12 minutes without stirring excessively. Fish is done when opaque throughout and flakes easily with a fork. Season with salt and pepper to taste.
