Prep Heat oven to 200C/400F. Cut thick cauliflower steaks from both halves and break the rest into florets. Cook the quinoa until fluffy.

Roast Toss the cauliflower and chickpeas in 6 tbsp oil and smoked paprika. Roast over medium heat at 200C/400F for 25–30 minutes until golden and tender.

Build Whisk the tahini, juice from both lemons, garlic cloves, and a splash of water into a pourable dressing. Massage the kale with a little oil.

Finish Add the roasted chickpeas and warm quinoa to the kale and toss with half the tahini dressing until coated.

Plate Spoon the grain base into two bowls and set a cauliflower steak on top of each. Drizzle with tahini and scatter with parsley.
