Prep
Thinly slice 400g beef sirloin against the grain. Toss with 20ml soy sauce, 10g brown sugar, 10ml sesame oil, 2 grated garlic cloves, and black pepper; rest 8 minutes. Julienne 200g cucumber and 120g carrot. Whisk 40g gochujang, 30ml rice vinegar, 10g brown sugar, 30ml sesame oil, and 4 grated garlic cloves until smooth in a wide bowl.

Boil
Bring water to a rolling boil. Lower 2 large eggs in gently, cook 8 minutes until jammy yolk, transfer to ice water, peel, halve, and set aside.

Boil
Cook 200g somyeon noodles in boiling salted water 3 minutes until just tender. Drain, rinse under cold running water until completely chilled, drain well, and set aside.

Sear
Heat 20ml neutral oil in a wide skillet over high heat until shimmering. Stir-fry marinated beef in batches (do not overcrowd) 90 seconds per batch until deeply browned and just cooked through. Lift out onto a plate.

Build
Add chilled noodles, julienned cucumber, and carrot to the gochujang sauce bowl. Toss until every strand is evenly coated.

Plate
Mound noodles in wide bowls, top with seared beef and halved egg, scatter scallion and sesame seeds across each serving.
