Instructions
1
Preheat the oven to 170°C and line two holes of a 6-hole muffin tin with paper cases, half-filling the remaining four holes with water.
2
Toast the 20g sesame seeds in a dry pan until fragrant, then grind in a mortar or spice grinder to a coarse, oily paste.
3
Sift the cake flour, baking powder and salt into a bowl and whisk in the sugar.
4
In a separate bowl whisk the egg, milk, vegetable oil, vanilla extract and the ground sesame paste until smooth.
5
Fold the wet mixture into the dry ingredients with a spatula until just combined, taking care not to overmix.
6
Divide the batter evenly between the two lined holes and bake for 19-21 minutes until a skewer comes out clean.
7
Transfer the cupcakes to a wire rack and cool completely, about 30 minutes, before frosting.
8
Beat the softened cream cheese and butter together with a hand mixer until smooth and lightly whipped.
9
Pipe or spread the cream cheese frosting onto the cooled cupcakes and scatter the whole black sesame seeds over the top.
