Instructions
1
Prep
Toast the dried chiles in a dry pot over medium heat 1 minute until they darken and smell nutty, then soak 15 minutes.
2
Blitz
Drain chiles and blend with canned tomatoes, garlic, onion, cumin, oregano, and cinnamon into a smooth paste with no visible skins.
3
Sear
Heat the oil in the pot over medium-high and brown the beef chuck 6 minutes, turning once, until a deep crust forms on all sides.
4
Braise
Pour the chile paste over the beef, add stock, vinegar, cloves, bay leaf, and salt, then cover and cook over low heat 2.5 hours until fork tender.
5
Crisp
Shred the beef, skim the fat, then dip each corn tortilla in consomé and griddle over medium-high with cheese and beef 2 minutes per side until crisp.
6
Plate
Arrange the tacos on a plate, scatter with cilantro and onion, add lime wedges, and pour hot consomé alongside for dipping.
