Beef and Onion Hand Pie
A hand-held pastry parcel of braised ground beef and caramelized onion bound in a red wine and thyme gravy, sealed in buttery all-purpose pastry and baked until deeply golden. Served warm on its own or with a green salad, it eats as a compact, savory French-style meat pie.

Instructions
1
Prep
Thinly slice the onion, mince the garlic, pat the ground beef dry, and set the pie dough on the counter to soften for 10 minutes.
2
Sweat
Melt the butter in a small skillet over medium-low heat and sweat the onion for 12 minutes, stirring occasionally, until soft and pale gold.
3
Brown
Raise heat to medium-high, brown the beef for 4 minutes, breaking into crumbles; stir in garlic, thyme, bay leaf, and tomato paste for 1 minute.
4
Deglaze
Pour red wine into the skillet and scrape the base over medium heat for 1 minute until reduced by half, then simmer 6 minutes.
5
Cool
Remove the bay leaf, spread filling on a plate, and cool for 15 minutes until no longer steaming.
6
Build
Roll dough into a 7-inch round, spoon cooled filling onto one half, fold over, and crimp edges with a fork.
7
Glaze
Brush the top with beaten egg using a pastry brush.
8
Bake
Bake on a lined tray at 400F (200C) for 25 minutes until the pastry is deeply golden and firm.
9
Rest
Let the pie stand on the tray for 5 minutes so the filling sets.
10
Plate
Transfer the pie to a plate and serve warm.
