Beef and Bean Stew
Chunks of beef sirloin braise slowly with white beans in a tomato and red pepper paste base seasoned with paprika, cumin and bay leaf, a staple of Turkish home cooking known as etli kuru fasulye. Simmered until the meat turns fork-tender, it is ladled over rice with a squeeze of lemon.

Instructions
1
Prep
Cut the beef sirloin into 1-inch cubes and pat dry. Finely chop the onion and mince the garlic.
2
Sear
Heat olive oil in a heavy pot over medium-high heat and brown the beef 4–5 minutes, turning occasionally, until a deep crust forms.
3
Sauté
Add the onion and garlic over medium heat, cook 3–4 minutes, stirring, until the onion softens and turns translucent.
4
Bloom
Stir the tomato paste, red pepper paste, paprika, cumin and bay leaf into the pot over medium heat 1–2 minutes until fragrant and darkened slightly.
5
Braise
Pour in the beef stock, cover and simmer over low heat 75–80 minutes, checking occasionally, until beef is fork-tender and pulls apart easily.
6
Finish
Stir in the cannellini beans and season with salt and pepper, simmer uncovered 10–12 minutes over low heat until sauce coats a spoon.
7
Plate
Remove the bay leaf, stir in lemon juice, spoon rice into a bowl and ladle the stew over it to serve.
