Instructions
1
Prep
Cut 400g beef chuck into chunks. Chop 0.5 onion and mince 1 garlic clove. Season beef with 1.5 tsp browning sauce, salt, pepper, 0.5 tsp thyme, and 0.5 tsp allspice. Marinate 1 hour.
2
Sear
Heat 1.5 tsp oil in a medium pot over medium-high heat. Brown marinated beef 4–5 minutes until deeply caramelized on all sides. Transfer to a plate.
3
Saute
Add chopped onion and garlic to the pot, cook 2–3 minutes over medium heat until softened, stirring occasionally.
4
Build
Return beef to the pot. Add 0.5 scotch bonnet pepper and 1.5 cup water. Bring to a boil over high heat, then reduce to medium-low.
5
Simmer
Cover and simmer 1.5–2 hours over medium-low heat, stirring occasionally, until beef is fork-tender and sauce reduces to a thick gravy.
6
Reduce and plate
Taste and adjust seasoning with salt and pepper. Ladle stew into bowls, ensuring each serving has tender beef and rich sauce. Serve hot.
