Baked Mackerel with Onions
Whole mackerel fillets baked over a bed of softened onions, tomatoes and green peppers, finished with olive oil, lemon and parsley. The oven bake keeps the fish moist while the vegetables collapse into a light pan sauce. Served straight from the dish with crusty bread on the side.
