Spiced Meat Sausages

Coarsely ground pork shoulder seasoned with orange zest, coriander seed, and leeks, grilled over direct flame in the style of Greek loukaniko sausages. Served with lemon wedges, grilled pita, and arugula salad, the sausage carries a fennel and citrus profile typical of northern Greek grilling.
