Spiced Chicken Clear Soup
A light Indian-style clear broth built on simmered chicken thigh, whole spices and fresh aromatics, finished with black pepper and cilantro. The soup stays thin and brothy rather than creamy, drawing warmth from ginger, garlic and green chili, and is served hot as a starter or light meal.

Instructions
1
Prep
Cut the chicken thigh into bite-size pieces. Crush the garlic and slice the ginger. Chop the celery and carrot.
2
Simmer
Combine the chicken, water, celery, carrot, garlic, ginger, chili, cinnamon stick, cloves and peppercorns in a saucepan over medium-high heat. Bring to a boil, then reduce to low and simmer uncovered 25 minutes until chicken is fork-tender.
3
Finish
Skim any foam from the surface. Stir in ground cumin, salt and cracked black pepper, then simmer 3 more minutes on low until spices dissolve.
4
Plate
Ladle soup into a bowl, scatter cilantro over top and squeeze lemon juice on before serving hot.
