Grilled Trout with Almonds
Grilled trout fillet with crispy skin, topped with butter-toasted almonds, lemon juice and parsley. Served alongside steamed green beans, this classic French preparation—truite aux amandes—balances nutty richness against the fish's delicate, flaky flesh.

Instructions
1
Prep
Pat the trout fillet dry, season both sides with salt and pepper, and brush the flesh side lightly with melted butter.
2
Grill
Place skin-side down on a preheated medium-high heat grill or grill pan for 4 to 5 minutes until the skin crisps and releases easily from the surface.
3
Grill
Flip the fillet carefully and grill the flesh side for 2 to 3 minutes over medium-high heat until the trout flakes easily and turns opaque throughout.
4
Toast
Melt the remaining butter over medium heat, add the sliced almonds and stir constantly for 2 to 3 minutes until golden brown; stir in the minced garlic, lemon juice and chopped parsley.
5
Steam
While the fish grills, steam the green beans in a pot of water over medium heat for 4 minutes until tender, then drain and toss with olive oil.
6
Plate
Set the trout fillet on a plate, spoon the almond butter mixture over the top, and arrange the green beans and lemon wedge alongside.
