Instructions

1
Prep Mix flour with salt, then work in warm water, yogurt, and 1 teaspoon olive oil until a smooth elastic dough forms; knead for 3 minutes until it springs back when poked.
2
Rest Cover the dough and let it sit at room temperature for 20 minutes.
3
Sauté Heat the remaining olive oil in a small skillet over medium heat and cook the onion for 4 minutes until soft and translucent.
4
Sear Add the ground beef to the skillet and cook over medium-high heat for 5 minutes, breaking it up, until no pink remains and edges brown.
5
Bloom Stir in the cinnamon, allspice, cumin, pine nuts, and salt; cook over medium heat for 1 minute until fragrant, then cool.
6
Wrap Roll the dough to 1/16-inch thickness, cut into four 3-inch rounds, fill each with beef mixture, fold in half, and crimp edges tightly.
7
Fry Heat the vegetable oil to 350°F (175°C) and fry pastries in batches for 3 minutes per side until deep golden brown and crisp.
8

9
