Instructions
1
Prep
Slice pork loin, then julienne carrot and cucumber into thin batons, tear lettuce leaves into bite-sized pieces, and arrange each separately.
2
Poach
Lower pork loin into gently bubbling water over medium heat and poach 12 minutes until internal temperature reaches 145°F (63°C).
3
Cool
Remove pork to a plate and let rest 5 minutes until cool enough to handle, then slice into thin strips.
4
Boil
Drop rice vermicelli into the same pot of boiling water over high heat and cook 2 minutes until strands turn translucent, then drain.
5
Assemble
Fill a shallow dish with warm water, dip one rice paper wrapper for 5 seconds until pliable, lay flat on a damp board.
6
Wrap
Layer pork strips, vermicelli, lettuce, cucumber, carrot, mint, cilantro, and a chive across the lower third, fold bottom edge over filling, tuck sides, and roll upward into a tight cylinder.
7
Repeat
Assemble the remaining two rolls the same way, keeping finished rolls under a damp towel so the rice paper does not dry out.
8
Sauce
Stir peanut butter, hoisin sauce, lime juice, and water together in a small bowl until smooth and glossy.
9
Plate
Arrange the three rolls on a plate, slice each in half on the diagonal if desired, and serve with the peanut hoisin sauce alongside for dipping.
