Instructions
1
Prep
Halve the peeled eggs lengthwise and set aside. Finely chop the onion and tomato, mince the garlic, and grate the ginger.
2
Heat the vegetable oil in a small saucepan over medium heat and sauté the onion for 4-5 minutes until soft and light golden at the edges.
3
Stir in the garlic, ginger, turmeric, chili powder and coriander, cooking over medium heat for 1 minute until fragrant and oil separates.
4
Add the tomato and simmer over medium-low heat for 5-6 minutes, mashing occasionally, until it breaks down into a thick paste.
5
Pour in the water and season with salt, then simmer uncovered over medium-low heat for 6-8 minutes until the gravy coats the back of a spoon.
6
Stir in the heavy cream and garam masala over low heat for 1 minute until the gravy is glossy, then nestle the halved eggs into the gravy.
7
Simmer gently over low heat for 3-4 minutes until the eggs are warmed through.
8
Plate
Spoon the eggs and gravy over the basmati rice and scatter the cilantro on top.
