Broken Eggs with Sausage and Potatoes

Fried potato cubes and crumbled pork sausage folded through soft-scrambled eggs, a Spanish home-kitchen dish known as huevos rotos. Olive oil, garlic and smoked paprika season the pan, the eggs stay loose and custardy, and everything is finished with parsley and flaky salt before serving.
