Battered Fried Anchovies
Fresh anchovies are butterflied, coated in a light seasoned flour batter, and shallow fried until the skin crisps and the flesh stays tender. The Turkish coastal snack, called hamsi tava, is served with lemon wedges, red onion, and parsley, eaten hot straight from the pan.
