Instructions
1
Prep
Halve the eggplant lengthwise, score the flesh and salt lightly. Let sit 10 minutes in a colander to drain bitter liquid.
2
Roast
Oil the eggplant halves and place cut-side up on a baking tray. Roast at 425°F (220°C) for 20 minutes until flesh is soft and skin blisters.
3
Brown
Heat 1 tbsp oil over medium heat. Cook finely chopped onion 4 minutes until soft, add minced garlic 30 seconds, then add ground beef and cook 5 minutes over medium-high heat until browned.
4
Simmer
Stir in diced tomato, tomato paste, half the sliced bell pepper, paprika, cumin, salt and pepper. Add hot water and simmer 8 minutes over medium-low heat until filling thickens.
5
Stuff
Press down eggplant centers to widen pockets, spoon filling into each half, mound slightly and top with remaining bell pepper.
6
Bake
Return stuffed eggplant to the oven at 400°F (200°C) for 15 minutes until topping caramelizes and filling bubbles.
7
Plate
Transfer to a plate, scatter chopped parsley over top and serve hot.
